How is Pork Jerky prepared?
Unlike biltong, jerky starts with a cut of meat (here pork) sliced into strips. These are then marinated and dried. The texture is firmer with this type of product, which combined with protein intake, enhances the feeling of satiety. The 90-gram portion is salted to improve preservation (expect less than 4g of Dead Sea salt). Salt consumption should be monitored to avoid exceeding the daily dose. However, the salt content encourages hydration and compensates for some of the salt losses from perspiration.
