Grated and freeze-dried cheese, aged for 20 months.

The Bonat Farm was awarded the "fuoriclasse" prize in 2012 by the Gambero Rosso for its grated Parmesan cheese, which is recognised as one of the 17 best cheeses in Italy. Bonat cheese can be eaten in the best restaurants in the world.

300g of this freeze-dried cheese is equivalent to 440g of fresh Parmigiano-Reggiano

What is the difference between this cheese and Parmesan cheese? None except for the name. Parmesan is a DOP cheese. This freeze-dried cheese cannot be called such because it contains 0.5% moisture as opposed to the 30% required for Parmesan.
